Seven Super Simple Snacks

Edamame: Buy them frozen and keep on hand for a quick bite. Simply boil in water for 5 minutes and, Voila! Kids love to pop them out of the pods into their mouths. A great lunchbox snack as well—packed with plant protein.

Roasted Chickpeas: Preheat oven to 400°. Line a baking sheet with parchment paper. Place 1 ½ cups, cooked chickpeas (about 1 can or 1/2 cup dried) on sheet and toss with less than 1 tablespoon of olive or coconut oil, 2 teaspoons of fresh lemon juice, 2 teaspoons reduced sodium tamari or soy sauce, and 1/8 teaspoon of agave nectar (optional). Bake for 25 minutes, tossing halfway through baking, until liquids are absorbed. Serve warm or at room temperature. Kids DEVOUR these. Feel free to add ½ teaspoon of any fresh herb you have on hand before baking if your kids will go for that, too.

Frozen Grapes: Believe it or not, simply freezing grapes makes them soooo much more interesting. Kids love them, and they’re great to pack for a picnic in the summer or in a lunchbox in the winter. Put them on skewers to make a fancy treat.

Smoothie Tips: Smoothies are a great way to get kids to eat more fruit and even GREENS. If your kids think they don’t like “green” things, make sure your smoothie contains blueberries—the whole thing turns purple. Add frozen fruits, romaine lettuce, spinach, even frozen broccoli, and fill the blender with water or your favorite non-dairy milk, and blend away!

Spiral Wraps: Spread whole-wheat tortillas or wraps with hummus and top with shredded carrots and sprouts of any kind. Roll up the wrap and slice into 1-inch rounds to create a pretty kid finger sized rollup. Obviously, the possibilities with this recipe are endless—improvise with whatever you have on hand (refried beans, cucumbers, peppers, etc.). Just be sure to add the veggies!

Veggie Spiral Wraps Make Great Healthy Snacks For Kids

Roasted Garlic:
Peel off the papery outer skins of the garlic, leaving the bulb intact (use as many as you would like). Trim about a half an inch off the top of each bulb to expose the cloves. Drizzle with a bit of olive oil or spray with a mister (this technique can help reduce the amount of oil you use—be sparing). If you have a covered garlic roaster, that’s great. If not use a shallow casserole dish with a cover. Bake covered at 350° for 40 minutes to 1 hour. Garlic is done when it starts to pop out of the skin a bit. Let it cool and then let kids SQUEEZE the garlic out of the cloves onto whole grain crackers or bread. Garlic can be spread on the wraps in the spiral wrap recipe, and kids will have fun with this hands-on food. 


Kale Chips: Carefully cut the long leaves from the stems and ribs of two bunches of rinsed Lacinato/Tuscan/Dinosaur Kale (this kale goes by many names and is long-leafed and bumpy looking). Toss with a tiny bit of olive oil (less than 1 tablespoon) and sprinkle with less than 1/8 teaspoon salt (add pepper if your kids like it) and bake for about 30 minutes at 250° on 2 large baking sheets until crisp. These are really fun to munch on. You won’t believe that your kids are chowing down on KALE.
